When you're vegan or vegetarian, the question that you're asked repeatedly is "why?" There are many reasons, but for me, there are three main ones. First, it's good for your health. Eating more plants has numerous benefits. Second, it's for the animals. The global meat industry slaughters an astonishing 190 million land animals every day[^1^]. But the most significant reason of all is for the environment. It impacts all living creatures, future generations, and the planet as a whole.

The name of my blog, Let's Nom Nom, signifies the idea that food brings people together. So, I organized an Earth Day event recently to celebrate great food from local vegan vendors and to start a dialogue about veganism and the environment among old and new friends.

As someone who believes in design as a driver for positive change, designing for an Earth Day vegan tasting event was both fun and rewarding. I want to extend a huge thank you to Let's Dutch and all our food vendors for being part of this incredible experience! Even the photos that you see here are a result of incredible teamwork. By going vegan for just one meal, each guest at the event saved 370 gallons of water, 7 pounds of CO2 equivalent greenhouse gas emissions, and 15 pounds of grain[^2^]. It may seem like one person's actions wouldn't make a significant difference, but even switching to one vegan meal a day can have a positive impact. Remember, it's not all or nothing.

A Night of Vegan Eats, Sweets, and Drinks

What an incredible night of vegan eats, sweets, and drinks! Allow me to take you through the highlights.

To start off, VSpot Organic's avocado fries were an absolute hit. Unfortunately, they were so popular that I don't have any photos of them from the event. Perfectly ripe avocado slices, panko fried, and served with a spicy vegan mayo. They were pure heaven! Next, we indulged in VSpot's warm and flaky empanadas, which had just earned a spot on a Buzzfeed list the day before.

Since we had many veg-curious omnivores attending the event, I wanted to introduce them to the raw vegan, gluten-free goodness from Rockin' Raw. Made of zucchini, mushrooms, sea veggies, and almonds, these bites were an absolute hit that night!

As a healthy palate cleanser, we served VSpot's fresh and colorful summer rolls. The light, barely-there rice paper wrappers, filled with avocado, carrots, cucumbers, and greens, served as a cheerful reminder that summer is just around the corner.

VSpot's tostada de molida combined juicy seitan carne molida, vegan cheddar, beans, guacamole, and pico de gallo. This veganized Latin classic with a crunchy tortilla was an absolute delight, despite being a bit messy to eat at a cocktail party. Trust me, every messy bite was worth it!

And of course, I couldn't resist featuring a dish of my own! I spent the morning in the kitchen crafting a batch of my delicious black bean sliders. Since vegan mini slider buns are not easy to come by, we got creative and cut vegan hot dog buns down to size.

Caramelized onion cashew spread, guacamole, and baby arugula added the perfect finishing touches to my homemade black bean patty. Although it's made from plants, it looks just as meaty as any traditional burger. And the vibrant green of freshly-made guacamole is always a sight to behold.

I hope everyone saved room for dessert because Brooklyn Rose Pastries created adorable champagne and maple cupcakes specifically for the event. Since they were mini cupcakes, you could enjoy both flavors without getting too full. One was topped with sprinkles, and the other was topped with sparkles. A true party for your taste buds!

To add an extra special touch, our guests were invited to take a pit bull or calico square of chocolate home with them. Rescue Chocolate's peanut butter pit bull squares and calico coconut rum squares were the perfect bite-sized treats to save for later. As a cat lady, my personal favorite was the calico coconut rum chocolates, but each bite was pure bliss!

That's not all! Our friends at May Wah Vegetarian Market filled our goodie bags with their addictive bacon jerky and teriyaki jerky. They also invited everyone to join their 21st anniversary celebrations this weekend. Let's Dutch added homemade vegan biscotti to our goodie bags too. Every aspect of this event was made with love.

Amidst the mixing, mingling, and eating, I hope everyone had a chance to take a look at our posters along the brick wall. They served as a reminder of what Earth Day is all about and how veganism can help tackle climate change. If you're curious, you can view the full collection of posters here.
